<p>Pearls have long been associated with tradition, timeless elegance and inherited refinement, yet in recent years they have quietly reinvented themselves. No longer reserved for formal occasions or perfectly matched strands, the natural or cultured bounty of the oyster has stepped into a more expressive, contemporary role.</p>

<p>Formed slowly and shaped by nature, pearls are one of the most poetic gemstones. Their enduring appeal lies in this balance between time and transformation. Yet, the modern pearl necklace is not about perfection; it is about presence. Pearl designs have become increasingly fluid and sculptural, as jewellers are more captivated by individuality, texture and contrast, and less interested in symmetry and polish.</p>

<p>Baroque pearls, with their irregular shapes and organic forms, sit at the centre of this evolution. Their asymmetry gives each piece a sense of movement, as if the pearl itself is still in the process of becoming. Designers often allow these shapes to dictate the final form of a necklace or earring, pairing them with molten gold, oxidised silver or minimal metal settings. The result is jewellery that feels intuitive and alive.</p>

<p>Scale has also shifted dramatically. Oversized pearls are now celebrated rather than considered too bold. Single pearl earrings replace traditional pairs, while large pendants hang from fine chains with understated confidence. Layering has become a defining styling choice, with short pearl chokers worn against long strands or mixed with metal chains. Now a popular choice for many occasions – not just special ones – pearls move effortlessly from tailored daywear to evening looks.</p>



<h3 class="wp-block-heading">Beyond the Pale</h3>



<p>Colour plays a quiet but powerful role in modern pearl design. While classic white remains timeless, designers are increasingly drawn to pearls in soft blush, lavender, gold and deep charcoal tones. Tahitian pearls with peacock and green overtones bring drama, while golden South Sea pearls add warmth and richness.</p>

<p>Beyond the pearl’s base colour, overtones create subtle iridescence on the surface, adding depth and dimension. Rose, silver and green overtones are particularly prized, enhancing the pearl’s visual richness. Rather than matching colours perfectly, designers often mix them within a single piece, embracing natural variation. This approach reinforces the idea that pearls are individual by nature, each carrying its own character.</p>



<h3 class="wp-block-heading">Love of Lustre</h3>



<p>As pearl designs grow more expressive, understanding quality becomes essential. Grading pearls is both an art and a science, balancing measurable characteristics with aesthetic judgment. Lustre remains the most important factor in determining a pearl’s quality. It refers to how light reflects from the surface and interacts with the layers of nacre beneath.</p>

<p>Lustre gives pearls their unmistakable glow, the quality that draws the eye even from a distance. High-quality pearls appear bright and sharp, with reflections that seem almost mirror-like. Lower quality pearls lack this depth, appearing flat or chalky.</p>

<p>Surface quality also plays a role, though its importance has evolved. Because pearls are organic, most have some imperfections. In traditional grading, fewer blemishes meant higher value. Only deep cracks or heavy blemishes significantly detract from a pearl’s worth.</p>

<p>Shape remains a defining factor in grading, though modern taste has expanded its boundaries. Perfectly round pearls are rare and still highly valued, but they are no longer the sole standard of beauty. Oval, drop, button and irregular shapes are increasingly sought after for their individuality.</p>

<p>Last year, she took on her most ambitious part yet: Sofia Falcone in HBO’s The Penguin, a spin-off from the 2022 film The Batman, with a prosthetics-disguised Colin Farrell in the titular role. She imbued Sofia – a cunning, ruthless player in Gotham’s criminal underworld – with layers of complexity. She wasn’t just a villain; she was a woman navigating power, legacy and survival.</p>

<p>“I’m such a huge Batman fan, so to just even be in this universe was a thrill, but to get to play this multi-layered villain, it was a dream,” she says. “Sofia is such a wonderful example where you get to see how she’s driven mad and how the world can drive someone mad, and how pain can drive people to do terrible things. I mean, that’s the world that we’re living in.”</p>

<p>Asked by the media during the show’s run how she felt her character was being received, she replied coyly: “I don’t read reviews. I’m too much of a scaredy cat. <p>Sharing menus are inspiring and often daring. Ours begins with Milk of the Tiger, a delicate, fresh scallop bathed in buttermilk and coconut milk, topped with Mexican ancho chilli oil. It’s a beautiful way to awaken the senses, balancing sweetness with a smoky kick. As Bolam puts it, “Our dishes are about honest flavours; simple, genuine, yet refined.” You can really taste that philosophy here. This dish sets the tone for the evening: a celebration of fresh ingredients crafted with mindful simplicity.</p>

<p>A meticulously plated appetiser prepares the stage for an artful presentation of toro, botan shrimp and striped jack flown in daily from Japan’s fish markets. The sashimi course is not just a tasting but a quiet meditation on freshness and balance.</p>

<p>The toro is rich and luxuriously marbled, melting on the tongue with a buttery smoothness that defines top-grade fatty belly of the bluefin tuna. Prized for its size and sweetness, the botan shrimp arrives with a translucent hue, its plump flesh offering a crisp snap and lingering ocean sweetness. The white trevally, with its clean, lightly oily profile, offers a refined contrast to the other two cuts.</p>

<p>We continue with two seafood treasures cooked on the teppan with care. Black tiger prawn is plump and meaty, its natural sweetness enhanced by minimal seasoning and masterful handling. The crustacean is grilled until just opaque, releasing a subtle, smoky aroma. </p>

<p>At the heart of the Tsubaki set is Minato’s crown jewel: A5 Miyazaki sliced wagyu beef. Boasting a BMS (beef marbling score) of 12 – the highest rating – this world-renowned wagyu is sourced from Miyazaki Prefecture, where cattle are raised under strict conditions to deliver beef of incomparable quality. The wagyu is lightly seared and wrapped with garlic and green onion, a simple but brilliant pairing that enhances its umami depth without distracting from its intrinsic richness. The beef glistens as it hits the plate, and each bite yields an exquisite juxtaposition of seared outer edge and melting interior.</p>

With sansho pepper adding a gentle numbing tingle, the crispy whitebait offers bright, comforting contrast to the indulgent wagyu we have just enjoyed. Here again, the balance between richness and freshness is maintained with elegant precision – a hallmark of Japanese cuisine.</p>

<p>Arguably second only to Beijing opera in national prominence, Cantonese opera traces its roots back to the late 19th century, emerging in Guangdong province before flourishing in Hong Kong. At its core, it integrates music, theatrical performance, dance and martial arts, creating a multifaceted experience that encapsulates storytelling at its finest. As the genre evolved, it absorbed influences from other regional opera styles, as well as Western theatrical elements, refining its characteristic flair.</p>

<p>Also known as Yueju, this form of traditional Chinese opera gained immense popularity during the early 20th century, becoming a staple of local culture among the Cantonese-speaking population. It played its part in 2023 too, premiering <em>Love in the Bamboo Grove</em>, a new Cantonese opera penned by Raymond To.</p>

With a focus on promoting traditional performances, the Xiqu Centre plays a significant role in elevating the status of Yueju within the cultural landscape. Annual cultural events such as the Chinese Opera Festival and the more experimental Black Box Chinese Opera Festival provide further opportunities for enriching performances.</p>

<p>Celebrate this wonderful festival steeped in cultural tradition by joining the happy throng of visitors heading to the beautiful island of Cheung Chau. The key days of the festival are filled with lion dances, Taoist rituals and the amazing piu sik parade. Here, village children on stilts seem to float through the narrow streets, a spectacle made even more memorable as they are dressed as deities in brightly coloured attire. There is also the famous bun scrambling competition to enjoy, followed by the pomp of the presentation ceremony. This fun-filled festival always leaves lasting memories.</p>

<p>Chopin&#8217;s piano music is utterly enchanting. His works stand between the Classical and Romantic eras &#8211; both romantic yet retaining the purity of Classicism, deeply moving while preserving the timeless elegance of the classical tradition. He composed many captivating pieces without titles, only categorized by genre, such as nocturnes, waltzes, impromptus, mazurkas, and polonaises. During his time, the hallmark of Romanticism was the use of ‘programmatic titles,’ so strictly speaking, Chopin was not entirely a Romantic composer.</p>

<p>A joyous spectacle luring crowds to the waterfront, the Tuen Ng Festival is embedded deep into the fabric of Hong Kong’s cultural life. It pays homage to Qu Yuan, a famed poet in ancient China who threw himself into the Miluo river, spurring villagers to race out in their boats in a vain attempt to save him. <p>Along with other great philanthropic families in Hong Kong history, the Ruttonjees have left an indelible mark on the city. Their legacy has been amazing acts of giving and the establishment of vital charitable foundations. Through their generosity, their footprint on the social fabric is wide, deep-rooted and continues to this day.</p>

<p>The story of the Ruttonjee family, in many ways, mirrors that of Hong Kong – an epic tale of trade, entrepreneurship, philanthropy and, sometimes, overcoming huge adversity. They are Parsis, an ethnoreligious group originally from Persia (now Iran) that migrated to India, and their patriarch, Hormusjee Ruttonjee, arrived in Hong Kong from Bombay in 1884. He soon began trading in wine, spirits and provisions and founded the family company, H. Ruttonjee &amp; Son, Ltd. Ruttonjee Hospital in Wan Chai, formerly Ruttonjee Sanitorium and dating back to 1949, is the most visible of the family’s many gifts to the city.</p>

<p>The Ruttonjees: Industry, Foresight &amp; Charities, a coffee-table book launched earlier this summer, superbly documents their contributions to the success and well-being of the community. Aside from preserving their own family history for future generations, the tome is intended as a celebration of all those industrious families who have enabled Hong Kong’s rise, no matter their ethnicity or background. It will be placed in public libraries, providing insight to all on how and why the city has thrived.</p>



<h3 class="wp-block-heading">Ethnic diversity</h3>



<p>“Since 1842, numerous ethnic groups have contributed [to Hong Kong] and this should be highlighted to the young local population,” says fourth-generation family member Noshir N. Shroff. He cites the fine examples of many other Parsis in the early years of Hong Kong such as Sir Hormusjee Mody of brokerage company Chater and Mody, and Dorabjee Naorojee Mithaiwala, founder of the Kowloon Ferry Company (forerunner of the Star Ferry).</p>

<p>“The Indians have been traders for a long time and have contributed to the robust Hong Kong economy,” notes Shroff, while stressing that other ethnic minorities, including the Filipinos and the Nepalese, were also instrumental in Hong Kong’s growth over the last century, working alongside the local Chinese population and the British.</p>



<h3 class="wp-block-heading">Entrepreneurial drive</h3>



<p>It was Hormusjee Ruttonjee’s determination to succeed that most impresses Shroff as he surveys his rich family history. He particularly admires his great-great-grandfather’s entrepreneurial spirit, coming to Hong Kong by ship and venturing into segments of the market where he saw opportunities but had little knowledge.</p>

<p>This flair for business was inherited by Hormusjee’s son, Jehangir H. Ruttonjee, who struck out on his own, founding the Hong Kong Brewery and Distillery Ltd. The Sham Tseng brewery he opened in the 1930s was subsequently acquired and operated by San Miguel until 1996.</p>

<p>Noshir Shroff is proud of how Jehangir overcame the many obstacles standing in the way of his vision. He was able to gain not only the necessary water rights from the government but also the support of the villagers. In a testament to his business ethics, he rented their land, one parcel at a time, rather than buying it outright, thus affording them a regular annual income.</p>



<h3 class="wp-block-heading">Winning hearts</h3>



<p>Indeed, it was Jehangir’s sympathetic interactions with the locals all those years ago that, in part, initiated the family book. When its author, Carl Lau, was conducting his doctorate research in the Sham Tseng area, the Ruttonjee name was repeatedly mentioned by village elders.</p>

<p>Shroff retells the story: “The villagers recalled how they wanted a piece of land for a school and clinic, and were prepared to purchase this, but Jehangir told them he would not sell – he wished to give them the land.”</p>

<p>When Lau eventually met Shroff and his family, it was agreed that he would write a book about their history – not just their connection to Sham Tseng but their wider business and philanthropic endeavours.</p>



<h3 class="wp-block-heading">Enduring hardship</h3>



<p>The Japanese occupation of Hong Kong during the Second World War counts among the biggest challenges the Ruttonjee family would face. In these dark times, they housed and fed many fellow Parsis in their two Duddell Street buildings, with all welcome to shelter in the basement during air raids.</p>

<p>Although Jehangir’s prominence and reputation initially earned him the ear of the Japanese, his activities soon began to raise their ire. “Jehangir orchestrated a fundraising campaign for the maintenance and relief of British [civilians held in the internment camps],” relates Shroff. “That was a step too far for the Japanese and resulted in him and his son, Dhun, being imprisoned and brutally tortured.”</p>

<p>Following a turbulent post-war period with the collapse of the stock market and crop failures, Jehangir sold the brewery business to San Miguel ¬– and in characteristic fashion steered the money into numerous charity projects.</p>



<h3 class="wp-block-heading">Charity after tragedy</h3>



<p>The tragic passing of his two daughters, Tehmi in 1944 from tuberculosis, and some eight years later, Freni of cancer, shaped the direction of the family’s charitable legacy. “Despite the grief [of Tehmi’s death], Jehangir provided funds for setting up the Ruttonjee Sanatorium for those affected [by TB]. This building is now the home of Ruttonjee Hospital, a part of the Hospital Authority,” says Shroff, who is exceedingly proud of this project.</p>

<p>Establishing the Hong Kong Anti-Tuberculosis Association in 1948 – now named the Hong Kong Tuberculosis, Chest and Heart Diseases Association, and involved in the management of the Ruttonjee and Grantham Hospitals – has, Shroff believes, made a huge difference to the people of Hong Kong. “Commitment to the association has become a [Ruttonjee-Shroff] tradition with several family members serving on the board of directors,” he says.</p>

<p>After the death of his second daughter, Jehangir erected the Freni Memorial Convalescent Home for the rehabilitation of tuberculosis patients. “Decades later, once TB was in permanent decline, this building became the Freni Care and Attention Home for the aged,” explains Shroff. The 250-bed nursing home, the Rusy M. Shroff Dental Clinic and four Chinese medicine clinics come under the remit of the Hong Kong Tuberculosis, Chest and Heart Diseases Association.</p>



<h3 class="wp-block-heading">Passing the baton</h3>



<p>Jehangir Ruttonjee was also President of the Hong Kong Society for the Protection of Children from 1950-1955, patron of the Family Planning Association of Hong Kong and chair of the Hong Kong Model Housing Society. “He died in 1960, having donated HK$2 million over his lifetime, a considerable sum in those early days,” says Shroff.</p>

<p>Following the death of his son Dhun in 1974, the mantle as head of the family passed to Rusy Shroff, the nephew Jehangir had adopted along with siblings Beji and Minnie after their father was lost at sea during a typhoon in 1931.</p>



<h3 class="wp-block-heading">Good deeds</h3>



<p>The importance of religious faith cannot be underestimated in the family story. The Parsi community practise Zoroastrianism, one of the world’s oldest monotheistic religions. “The core teachings of Zoroastrianism are good thoughts, good words and good deeds. Charity plays a very big part here,” says Shroff.</p>

<p>Other Parsi families who came to Hong Kong in the 1800s used their fortunes for the good of the city. Hormusjee Mody’s largesse, for example, enabled the founding of the University of Hong Kong.</p>

<p>Shroff believes such acts of benevolence are the Hong Kong way. “Look at the number of charitable foundations established by our local tycoons,” he says. “They have profited by Hong Kong and are giving back. The favourite saying of my uncle, Rusy Shroff, was ‘To live is to give and forgive’.” In 2017, three months before Rusy Shroff passed away at age 100, he established the Rusy and Purviz Shroff Charitable Foundation, which has since given more than HK$200 million to charities in Hong Kong, mainland China and India.</p>
